Pumpkin, Cranberry, and Walnut Dressing

This is a little more work than a prepackaged mix, but it’s well worth the effort.

Pumpkin, Cranberry, and Walnut Dressing

1 2-second spray cooking spray
2 1/3 cups fine cornmeal
1 cup whole-wheat pastry flour
2 tsp baking powder
1 tsp baking soda
½ tsp sea salt
1 cup puréed pumpkin
1/3 cup applesauce
2 dates, pitted and chopped
2 Tablespoons ground flax seeds
2 cups soy milk
2 Tablespoons white wine vinegar
1 Tablespoon olive oil
1 small bunch scallions, finely chopped, including tops
1/4 teaspoon sea salt
2 stalks celery, diced
3/4 cup dried cranberries
1/2 cup walnuts, chopped
3 teaspoons dried sage
1 teaspoon poultry seasoning
1 teaspoon dried thyme
4 cups vegetable broth

  1. Preheat oven to 350° F.
  2. Spray a 13″ x 9″ baking dish with cooking spray.
  3. In a large bowl, sift together cornmeal, flour, baking powder, baking soda, and ½  teaspoon salt.
  4. In a blender or food processor, blend dates until pureed.
  5. Add pumpkin, applesauce, flax meal, soy milk, and vinegar, blend until smooth and homogeneous, and let rest for 5 minutes.
  6. Add wet ingredients to dry ingredients and stir to incorporate.
  7. Pour into prepared baking dish and bake approximately 35 minutes, until a toothpick comes out of the center clean.
  8. While cornbread is baking, heat oil over medium-high oil and sauté the scallions with a pinch of sea salt until translucent.
  9. Add celery and a pinch of sea salt and sauté until tender.
  10. Add cranberries and walnuts and sauté for about two more minutes.
  11. After cornbread has cooled, cut it into cubes.
  12. Add dried herbs and cornbread cubes to the sautéed mixture.
  13. Toss to lightly mix.
  14. Add vegetable broth and season to taste with salt.
  15. In a 13″x 9″ baking dish, bake, uncovered for 30-45 minutes, until brown and crispy on top and moist, but not wet, inside.
